



2 red apples, cored and sliced
2 Belgian endives
3 radishes, sliced
1 pack MEVGAL Manouri cheese (7oz), sliced in small cubes
1/2 cup coarsely chopped walnuts
1/2 cup finely chopped fresh parsley
The juice of half a lemon
Salt and pepper
2 Tbsp. apple cider vinegar
5 Tbsp. extra virgin olive oil
1 tsp. honey
Salt, pepper, green pepper and paprika
Soak the apple slices with lemon juice.
Separate the leaves from the endives.
Separate half of the leaves and finely chop them.
In a deep salad bowl mix the apple slices and the chopped endives.
Add the leaves, Manouri, walnuts, radishes, salt, pepper and parsley.
In a cup, add vinegar, olive oil, honey, salt, pepper, green pepper and paprika.
Mix well and pour over the salad when ready to serve.
